- Preheat oven to 350 degrees F (175 degrees C).
- Line a 9-inch pie plate with the pie crust.
- Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
- Add the onion and green pepper to the skillet and cook until softened.
- Stir in the tomato sauce, corn, black beans, and taco seasoning. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
- Spread the meat mixture into the pie crust.
- In a small bowl, combine the sour cream and cilantro.
- Spread the sour cream mixture over the meat mixture.
- Sprinkle the cheddar cheese on top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
